Peeled Hard Wheat with ricotta cheese and beetroot

Cooking Method

Roast the 3αλφα Peeled Hard Wheat in a non-stick pan for 1 minute and then let it come to room temperature. Then transfer it to a bowl of water and let it soak for at least 3 hours.

Rinse the wheat and boil it for 60 minutes in a pressure cooker. If you don’t have a pressure cooker ,boil it in a regular pan over medium heat for 120 minutes.

In a bowl, mix olive oil with paprika, salt, pepper, finely chopped mint, juice and lemon zest. Cut the beetroot and the ricotta cheese into small pieces.

in a salad plate, put the boiled  wheat, pour in the dressing we have prepared and finally add the beetroot and the ricotta cheese.

We serve directly.
