Wash the spinach very well. Put 50 ml of olive oil in a pot over medium to high heat. Sauté the red onions, green onions and leek for 5 minutes. Then add the mushrooms and sauté for another 2-3 minutes. Cut the spinach and add it to the pot. Continue cooking until its volume is completely reduced.
