Cut the chicken fillets in medium pieces and the onions in quarters
Boil the chicken with the onions, salt and pepper.
After boiling, remove the skin and cut into small pieces.
Cut also the onions.
In the meantime, boil the 3αλφα Carolina rice in the chicken broth for 5 minutes.
Open 3 of the filo sheets and place them on a baking tray, sprinkling them with olive oil one by one.
Remove the rice from the heat and strain it.
In a bowl, mix the chopped chicken, onions, kefalotyri, feta, semolina, the oil and the beaten eggs with Carolina 3alf rice.
Pour the mixture into the pan where we have laid the filo sheets
Cover with the other two filo sheets, sprinkling with olive oil.
Bake the chicken pie at 180C for one hour.
The first 45 minutes we have it covered with foil and the last 15 minutes, we uncover it to let it get crispy and a nice golden color.
