For the Fava
Soak the 3αλφα fava in water for 30 minutes and then rinse and drain.
Transfer it to a saucepan with a thick base and cover with water (5cm extra).
Once boiled, we scrape the foam that is created. Stir and lower the heat.
Cut the carrots into thick rings, add in the pot and also the onion whole.
Simmer until well cooked, 30 to 45 minutes.
After boiling the ingredients until soften, extinguish the heat and stir with a wooden spoon, stirring constantly to obtain the texture of the porridge.
Combine it with a rod blender to homogenize the carrots and onions.
Add olive oil and salt and mix well.
For the Mushrooms
Heat the olive oil in a wide non-stick pan over medium to high heat. Put the mushrooms in the pan and cook for 3 minutes. Season with salt and pepper, stirring often. Lower the heat and continue until they get a nice golden color, for about 4-6 minutes. Lower the heat to medium and add the remaining ingredients. Tilt the pan to one side and with a spoon wash the butter and broth that has emerged on the mushrooms for 5 minutes.
Serve the cooked fava into plates and place the mushrooms on top.
