Hot salad with Beluga Lentils, wild arugula and goat cheese

Cooking Method

1) Put the 3αλφα black Beluga lentils in a saucepan with laurel and thyme.

2) Cover with cold water, salt well and bring to a boil.

3) When boiling, lower the heat and cook for 10 minutes.

4) Add the carrots and onions to the pan and continue boiling for another 10 minutes, until the lentils soften but do not dissolve.

5) As long as the lentils boil, prepare the dressing. Put all the ingredients in a multi (food processor) and beat until smooth.

6) Transfer the dressing to a large bowl.

7) Drain the lentils and transfer them warm to the bowl of the dressing. Add celery, rocket and parsley and mix gently.

8) Serve the salad with goat cheese (crushed or a whole slice on the side) and crushed roasted hazelnuts.
