Rice salad with mint, parmesan and pine nuts

Cooking Method

Put the water in a pot and bring it to a boil. Add the salt and the 3αλφα long grain rice, and boil for 12-15 minutes, depending on how crisp we want it.

Add the butter and mix. Remove the pot from the heat, cover with a clean cotton towel and allow to come to room temperature.

In a non-stick frying pan, sauté the pine nuts without olive oil until it turns a nice golden color without burning. Chop the mint.

In a large bowl, put all ingredients, mix and serve.
