Lentil salad with mushrooms and peppers

Cooking Method

Rinse the 3αλφα Small Lentils thoroughly, boil for 5 minutes and drain.

Heat 3-4 tablespoons of the total olive oil and sauté the onion and leek for 3 minutes.

Add the garlic and carrots and mix.

Add the small lentils and enough warm water to cover them.

Boil for about 25 minutes on low heat.

Then remove from the heat, strain and transfer to a large bowl.

Add all other ingredients.

Stir with a wooden spoon and serve with parmesan flakes.
