No bake Chickpea energy balls

Cooking Method

Place cooked chickpeas, peanut butter, the apples and honey in a food processor and blend for about a minute on high speed until the mixture is smooth.

Pour mixture into a large bowl, add the cinnamon, vanilla extract, salt, and oat flour and mash it with your hands until everything is combined. Mixture should be similar to a cookie dough consistency.

If it’s too dry, add more peanut butter; if it’s too wet, add oat flour.


Scoop out a heaping tablespoon of dough and roll between palms to form a ball. Repeat.

Melt the chocolate chips and drizzle over the energy balls. Alternatively, you can add them to the mixture before creating the balls.

Store in the fridge or freezer until ready to eat.
