Place the beans in a bowl to soak them in cold water overnight.
On the next day, drain the water and rinse the beans.
Then, put beans in a large pot and cover by 2 inches with cold water. You need to cook beans on a medium low heat for about 60 until beans are tender. Drain and transfer to the bowl.
Cut the peppers into cubes and sauté them in olive oil. Add the minced garlic and cooked until peppers are soft.
Mix them together with the beans, adding the lemon zest and its juice and extra olive oil if needed.
Season with salt, pepper and serve.
