Blackeye Beans with Octopus

Cooking Method

Wash the 3αλφα Blackeye Beans thoroughly. Boil them until soft and then drain. Boil the octopus for about 45 minutes with the ½ cup red wine, 1 bay leaf, 2 allspice berries and the chopped onion. Clean and wash the greens, soak them in boiling water and cook for 5 minutes. Drain and cut. In another saucepan sauté the onions, garlic and greens. Add the tomato, tomato paste, salt, pepper and a little water and boil for 15 minutes. Add the boiled beans, boiled octopus and continue cooking until all the liquid is absorbed. At the end add the oil and remove the pot from the heat. Sprinkle with dill and serve.
