Split fava with chorizo and peppers

Cooking Method

Put the yellow split peas to soak for 1 hour and drain.

Preheat the oven to 180°C. Place the sliced chorizo sausage and cut green peppers in a baking sheet and bake until golden to brown, about 25 minutes.

In a large pot, add the chicken broth, split fava, the paprika, salt and pepper. Simmer covered, stirring occasionally, until the peas are tender, 1 to 1 ½ hours.

Add the tomato paste and cook until it is dissolved.

Serve topped with the sliced chorizo and peppers and garnish with the chopped parsley.
