Salad with 3αλφα Blackeye beans, salmon and poached egg

Cooking Method

Wash the 3αλφα Blackeye Beans thoroughly and transfer them to a pan. Fill with water until the beans are well covered.

Boil for 50 minutes, until the beans are soft, strain and transfer to a large bowl.

Add the cucumber, green and red peppers, salmon, parsley and mix.

Add the olive oil, juice and zest from the lemon and mix.

Add salt and pepper to your tasteand serve.


For the poached egg

Bring a pan of water filled at least 5cm deep to a simmer. Add the white vinegar. Crack the egg into a small bowl. Stir the water to create a gentle whirlpool to help the egg white wrap around the yolk. Gently drop the egg in the center. Boil for 5 minutes and gently scoop the egg out of the water with a slotted spoon, blot them dry on a paper towel. Serve the egg over the salad.
