White Fasolada soup

Cooking Method

Soak the 3αλφα Medium beans from Thessaloniki OD overnight.

The next day, rinse them thoroughly and boil them in plenty of water for 20 minutes. Strain them well.

Cut the vegetables. Put 3 tbsp olive oil (out of the total) in a deep saucepan and add the onions, carrots and celery.

Mix well until they are all oiled up. Leave for 2-3 minutes on medium heat.

Add the  half-boiled 3αλφα beans and add boiling water to cover the materials up to 4 to 5 cm from their surface.

Grate the potato in a coarse grater and add it. Cover the pan and simmer the beans for 30-35 minutes. We add salt and pepper and if you like we add a little bit of chili flakes. Pour in the thyme and lemon juice and zest.

Finally, add the remaining olive oil.

Leave the beans to boil for a few more minutes, add salt and pepper and serve.
