Fresh salad with tuna and cranberry beans

Cooking Method

Soak the cranberry beans overnight. Place in a pot with cold water over medium-high heat and bring to a boil. Reduce heat to medium-low and simmer until beans are tender, about 1 hour. Make sure beans are covered with water during the entire cooking process and add salt towards the end of the boil. Drain and set aside.

in a salad bowl, whisk together the olive oil, vinegar, salt and pepper. Add the fresh salad leaves and tomatoes. Stir to combine. Add in the cooked cranberry beans and the chunks of tuna. Season with salt and pepper and serve.
